My fighter seems to drop from level 5 to 4 healing with every death. It does not seem to matter how many successes are obtained after attaining level 5. Is it possible that due to a fighters healing being capped at 5 that no further successes are counted, meaning any success lost due to death resulting in level loss?

Feature, not a bug. You will find the same thing happens to Fighter RM, which is also now capped at 5.
fighters healing caps at level 5, with that, i believe the cap is 100exp above level 4. The exp loss from death is completely random, but if it hits 100exp loss, then it will revert your level.
your observation is true and also applies to Resisting Magic. Since both are capped for fighters as soon as they reach their limit (check the wiki for different level caps of differing classes), a death results in a level drop of capped skills.
Any successes you gain after reaching the level cap are simply lost, so no "reserve" successes are accumulated.
But for regaining the level it´s pretty easy, since the deducted amount is rather low. For RM simply team up with a cleric and fight a couple of bracks near Andris. Easy stuff shouldn´t take longer than an hour at the most.
For Healing: This is one of the skills that isn´t of too much use for a fighter. Better carry the full allotment of heling pots with you, excpt perhaps for FDP, which aren´t required normally unless you hunt the poison beasts near Andris and Crescent Island.
healing is more or less useless for fighters IMO (and the same applies to wrestling, so don´t wate time forthat unless you have RPG reasons to do so).
At least you get the joy of hearing trumpets when you relevel those skills.
